Whipped Shortbread Cookies Recipe

  1. Prepare the Dough:
    • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
    • In a mixing bowl, cream the softened butter and powdered sugar together until light and fluffy (about 2-3 minutes).
  2. Add Dry Ingredients:
    • Sift together the flour and cornstarch, then gradually add this mixture to the creamed butter and sugar.
    • Beat until the dough is light, airy, and fully combined. The dough should be soft and smooth.
  3. Shape the Cookies:
    • Using a small cookie scoop or a spoon, drop small balls of dough onto the prepared baking sheet. Flatten slightly with a fork, or leave them as is for a rounded cookie.
    • If desired, decorate with sprinkles, candied cherries, or a chocolate chip pressed into the center of each cookie.
  4. Bake:
    • Bake the cookies in the preheated oven for 18-20 minutes, or until the edges are just starting to turn golden (they should remain mostly pale).
  5. Cool and Enjoy:
    • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
    • Store in an airtight container at room temperature for up to a week, or freeze for longer storage.
