Peanut Butter Balls

Preparing the dough:
In a large bowl, mix the peanut butter and softened butter until smooth.
Add the vanilla extract (if using) and gradually add the icing sugar, stirring until the mixture is smooth and not sticky.
Shaping the balls:
Take a small amount of dough and roll it between your hands to form balls about 2cm in diameter.
Place the balls on a baking tray lined with baking paper and place in the fridge for about 30 minutes to firm up.
