Chop the nuts with a knife.
In a large bowl, mix the chopped walnuts, hazelnuts, pumpkin seeds, sunflower seeds, sesame seeds, flax seeds, almonds and pine nuts.
Mix the ingredients:
Add the chopped dried apricots to the nut and seed mixture.
Pour in 40 ml of natural honey and add 1 egg white.
Add a pinch of salt.
Mix well until all the ingredients are evenly combined.
Form the Cookies:
Preheat your oven to 180°C (360°F).
Line a baking sheet with parchment paper.
Using your hands, shape the mixture into small cookie shapes and place them on the prepared baking sheet.
Bake
Bake in the preheated oven for 15 to 20 minutes or until golden brown and set.
Cool and Serve:
Remove cookies from the oven and let cool on the baking sheet for a few minutes. Transfer cookies to a wire rack to cool completely.
